Roasted Almonds with Herbs
 

I know. You think I must have checked into crazy-ville, suggesting you turn on your oven in hot weather. For nuts.

But I have to tell you, with a recipe that can be a topping for a variety of things (salads, pasta, chicken) it'll be worth it. Frankly, calling something so simple to make a recipe is a little weird for me, but the outcome is quite delicious. I'm using dried herbs - so they don't burn - on my nuts, but you could really set your imagination free on these jewels. Taking a savory or sweet route is up to you.

Chop these up to top on a salad, put it on a charcuterie platter, or enjoy by themselves. I crunch on these with a glass of Pinot Gris, which helps you cool down in the hot weather ... or so I've been told. I'll test a few more glasses and let you know what happens. 

 
 
 

Roasted Almonds with Herbs

Makes 1 cup

Ingredients
1 cup raw almonds
1 Tablespoon dried herbs
1 Tablespoon olive oil
Pinch of salt

Steps

  1. Put the raw almonds on a baking pan. Drizzle all of the olive oil.
  2. Put the dried herbs on top of the almonds and mix until all of the almonds are evenly coated.
  3. Bake in a 350°F oven for about 15-20 minutes. Cool completely before serving.
